Dairy-Free Hawaiian Haystacks

I have made some huge changes in my life this past year and it has been so wonderful for me. I feel AMAZING! I posted a while back about my change to a plant based diet. You can read that post for all of the details. My favorite part about this change is the abundance of fresh amazing produce that is always in our home now. My kids eat fruits & veggies in mass quantities and I LOVE it. I do not have to coax or beg or bribe, they want to. I had the opportunity to try out a little something called Grub Market that fed my love for fresh produce. I am sharing a recipe for dairy-free Hawaiian Haystacks that I made with some of our Grub Market ingredients! (I received a Free Grub Market produce box in exchange for this post.)

Grub Market is a grocery delivery service. They deliver boxes of fresh produce and healthy snacks straight to your door. All of the food is organic and farm fresh. Much of it is also locally grown! They love to partner with small, local farmers.  The prices are advertised to be 50% lower than traditional organic produce in the grocery stores! Their goal is to conveniently bring fresh food to everyone at wholesale prices.

We got some delicious stuff! My kids were most excited about trying a pomelo (some for the first time) and the pomegranate (they LOVE these!).

They use 3-day shipping so everything comes fresh to your door.  They give you the option to receive your box on Thursday or Friday. All orders are shipped on Mondays. Shipping is free on orders over $49. The boxes vary in price depending on what you choose. You can choose to have a regular delivery or just a one time delivery. I like that they do not make you sign up for a regular monthly subscription, or if you do, you can choose the frequency.  It is a really great service, especially if you do not have access to stores in your area that carry organic produce!  Also, they have unique things that your local stores may not carry.

Now for your recipe!  We have been loving Hawaiian Haystacks in our house for years. I used to make it with a can of cream of chicken soup, but since I changed my diet, I steer clear of that stuff. 🙂 So, I have a dairy-free Hawaiian haystacks option that is just as delicious! Even my husband agreed.

Dairy-Free Hawaiian Haystacks Recipe

Dairy-Free Hawaiian Haystacks

Hawaiian Haystacks are a delicious recipe for families because even the pickiest eater will like it! You start by layering rice on the bottom, then top it with a cream sauce. Then you get to choose from a variety of delicious toppings. It is super healthy and so tasty! I do ours vegetarian now, but I used to make chicken with it and that is the typical way to make it.

Here’s what you need:

Brown rice- cook according to directions (I make 2 cups for our family of 6)
Cream Sauce- See recipe below
Cooked Chicken (if not vegetarian)
Toppings

Dairy-Free Hawaiian Haystacks Toppings

Toppings:
Pineapple
Green Onions
Celery
Bell Peppers
Tomatoes
Shredded Coconut
Wonton Noodles
Slivered Almonds
Shredded Carrots
Olives

Dairy-Free Cream Sauce:
1 1/2 c. raw, unsalted cashews (soaked for 30-60 minutes in warm water)
2 Tbsp lemon juice
2 Tbsp Nutritional Yeast (Never tried it? It’s delicious & SO good for you!)
2 cloves minced garlic
1/2 c. water
Salt & Pepper to taste

Soak the cashews for 30-60 minutes. If you are in a hurry, you CAN skip this step, but the sauce may be a little chunkier. You can boil them instead and this serves the same purpose. Pour all of the ingredients into a blender, or use an immersion blender to puree it until smooth. If you do it in a sauce pan with an immersion blender, you can heat the sauce in the same pan. Season to taste. I like to add a bit of salt because the cashews have a little sweeter taste.

Layer the rice, sauce, then your choice of toppings. Chow.
