Cinnamon Carrot Chips

I am a bit of a foodie.   I was writing a food blog for a while but when this blog got busier, I put it on hold. I have been toying with the idea of just adding in recipes here.  Maybe it’ll happen. Would you guys be interested?

An important thing to me with food is that it has to taste good (of course) and I really LOVE healthy recipes. So, today I have a healthy snack that kids and adults can both enjoy. Have you ever had carrot chips?  We never had, but wanted to try them out. We made cinnamon carrot chips that were do delicious!

Cinnamon Carrot Chips from Teach Beside Me

How To Make Cinnamon Carrot Chips:

3-4 large carrots

1/2 tsp cinnamon

1/4 tsp salt

1 Tbsp sugar (or any sweetener you prefer ~honey or maple syrup would be delicious!)

Peel the carrots in large thick peels. You can do this best by pressing down hard as you peel. If you stick to one side of the carrot, it will flatten out and get easier.

Get your kids involved in the process, because all kids LOVE peeling carrots! Right?!

Oh, here is another one who wanted to peel carrots! Well, he was eating more than he was peeling. But we can pretend he was helping. 🙂

Once they are all peeled, toss them in a bowl with the other ingredients. Then spread them on a cookie sheet. The less they are overlapping, the better they will cook. Bake in an oven preheated to 375 degrees for 15 minutes, then stir them and cook about 10 more minutes. They will brown and as they cool, they will crips up more.
